Collagen-Rich Nourishing Bone Broth Ramen

This comforting soup is great for the skin and will help to boost your immune system. Leafy greens add fibre and the eggs provide plenty of protein.
Ingredients
1 package of soba noodles
1 cup sliced shitake mushrooms
4 chopped green onions
4 cups of chicken bone broth
4 cloves minced garlic
4 hard-boiled eggs
1tbsp grated fresh ginger
2 cups tatsoi leaves
Sriracha
Sesame oil
Lime juice
Instructions
- Boil some water and add soba noodles. Cook according to packet instructions, drain, rinse and set aside.
- Bring bone broth to boil in a large saucepan over medium-high heat and reduce to simmer. Add mushrooms, garlic, greens and ginger and simmer for 3 minutes until mushrooms are just cooked and leaves are wilted.
- Season to taste and divide between four bowls. Top each with an egg, a drizzle of Sriracha and sesame oil, and green onions. Finish with a squeeze of fresh lime juice.
